    Leave them on the counter

    Do not refrigerate firm fruit. Keep boxes in a single layer, out of hot sun, until the stem end yields and the kitchen smells like mango.

    Check daily

    A little blush or speckling is normal. Hard green fruit is not ready. Blackened, weeping fruit has gone past.

  3. 03

    Chill just before serving

    Twenty to thirty minutes in the fridge is enough. Longer cold dulls aroma. Eat the ripest fruit first.

The honest way

Chilled, as they are

Ripen on the counter until the stem end yields and the kitchen smells like mango. Chill 20–30 minutes, slice, and eat over a plate. This is how Chaunsa is meant to be judged.

For the table

Hedgehog cubes

Halve along the stone, grid the flesh without cutting the skin, invert, and serve. Best with Sindhri and Chaunsa. Put a stack of napkins out β€” ripe fruit drips.

One pitcher

Mango lassi

Blend ripe pulp with plain yogurt, a splash of milk or water, and a pinch of cardamom. Sweeten only if the fruit is shy. Anwar Ratol makes a particularly fragrant glass.

Make-ahead

Home kulfi

Reduce milk until thick, stir in strained mango pulp, cardamom, and a handful of pistachios. Freeze in moulds. Use fully ripe fruit β€” underripe mango tastes grassy when frozen.

Savory

Mango, cucumber & mint

Cube firmer Sindhri with cucumber, lime, mint, a pinch of salt and chili. Serve immediately. This is a salad, not a salsa that sits.

How do I know a Pakistani mango is ripe?

The stem end yields to a gentle press and the fruit smells like mango, not grass. Skin color helps but is not the only test. Hard green fruit needs the counter; blackened, weeping fruit has gone past.

Should I refrigerate them on arrival?

Not while they are still firm. Ripen on the counter, then chill briefly before serving. Cold too early dulls aroma and can damage the flesh.

Can I freeze leftover mango?

Yes β€” pulp fully ripe fruit for lassi or kulfi. Frozen whole mangoes lose their table texture. Do not freeze underripe fruit hoping it will sweeten.
