A box of Pakistani mangoes arriving in the United States is not ready until it says so. Chaunsa, Sindhri, and Anwar Ratol are packed to travel, then to ripen at home. Treat them like avocados with a perfume, not like apples.
When the box lands
Open it. Sort by feel. Fruit that yields slightly at the stem and smells sweet can sit out for a day and then be eaten. Fruit that is firm and quiet needs time on the counter, stem-end up or on its side, in a single layer. Do not bury them in a closed cupboard unless you like surprises.
How to ripen Chaunsa, Sindhri, and Anwar Ratol
- Room temperature is the default. A the USA summer kitchen is usually enough.
- Paper bag with a banana or apple speeds ethylene if you are hosting tomorrow. Check twice a day. These mangoes go from perfect to gone faster than grocery varieties.
- Color helps but is not the whole story. Chaunsa and Sindhri should be yellow-gold; Anwar Ratol turns a bright yellow. Give to gentle pressure as well.
- Never refrigerate unripe fruit. Cold stops ripening and dulls aroma. The fridge is for ripe mangoes you cannot eat in the next day, and even then only briefly.
How to store ripe fruit
Eat it. That is the real storage method. If you must wait, refrigerate ripe mangoes for a day or two and bring them back toward room temperature before serving so the perfume returns. Cut fruit can sit covered in the fridge for a short time; it will weep and soften. Frozen puree is a legitimate plan for leftover Sindhri if a bundle is more than the household can finish — lassi and kulfi exist for this reason.
What not to do
Do not leave the crate in a hot car. Do not stack boxes in a closed garage in July. Do not judge a Pakistani mango by the red blush rules you learned on a Tommy Atkins. Do not wait two weeks “to see.” These are eating mangoes with a short, glorious peak.
Serving
Wash, cut along the seed, cube or slice, or do the hedgehog. Chaunsa and Sindhri are generous for sharing plates; Anwar Ratol is a two-bite affair. If you ordered from us, the fruit on the shop pages is the same fruit this guide is written for.
